Wasabi Brussels Sprouts with Bacon

Serves: 5 servings
- 1 lb Brussels sprouts, ends trimmed, large sprouts cut in half lengthwise.
- 3 slices of bacon, chopped
- 1 shallot, sliced
- 1 Tbsp olive oil
- ¼ cup white wine
- ¼ cup water
- ¼ cup wasabi mayonnaise (to make your own, mix 1 tsp wasabi paste with ¼ cup mayonnaise – light will work fine)
- Cook bacon in a large skillet until crispy.
- Remove bacon to a bowl.
- Drain all but 1 Tbsp bacon fat from pan.
- Add 1 tbsp olive oil.
- Add Brussels sprouts, cut sides down, initially, and brown on medium high heat, 3-5 minutes.
- Add wine and deglaze pan by scraping up browned bits on bottom.
- Add water and shallots, cover, reduce to simmer and steam Brussels sprouts about 10 minutes until just tender.
- Mix in wasabi mayonnaise.
- The dish can hold now until you’re ready to serve.
- Preheat broiler to high with rack in middle of oven.
- Broil Brussels sprouts on high about 3 minutes until sauce starts to brown.
- Toss with reserved bacon and serve.
