Wasabi Brussels Sprouts with Bacon

Ingredients
  • 1 lb Brussels sprouts, ends trimmed, large sprouts cut in half lengthwise.
  • 3 slices of bacon, chopped
  • 1 shallot, sliced
  • 1 Tbsp olive oil
  • ¼ cup white wine
  • ¼ cup water
  • ¼ cup wasabi mayonnaise (to make your own, mix 1 tsp wasabi paste with ¼ cup mayonnaise – light will work fine)
Instructions
  1. Cook bacon in a large skillet until crispy.
  2. Remove bacon to a bowl.
  3. Drain all but 1 Tbsp bacon fat from pan.
  4. Add 1 tbsp olive oil.
  5. Add Brussels sprouts, cut sides down, initially, and brown on medium high heat, 3-5 minutes.
  6. Add wine and deglaze pan by scraping up browned bits on bottom.
  7. Add water and shallots, cover, reduce to simmer and steam Brussels sprouts about 10 minutes until just tender.
  8. Mix in wasabi mayonnaise.
  9. The dish can hold now until you’re ready to serve.
  10. Preheat broiler to high with rack in middle of oven.
  11. Broil Brussels sprouts on high about 3 minutes until sauce starts to brown.
  12. Toss with reserved bacon and serve.
