Roasted Delicata Squash with Green Onions

Ingredients
  • 2 lbs Delicata Squash (2-4 pieces)
  • 1 ½ Tbsp extra virgin olive oil
  • ½ tsp Kosher salt
  • 1 bunch green onions
  • 1 ½ Tbsp margarine or butter
  • 1 tsp maple syrup
Instructions
  1. Preheat oven to 425 degrees F.
  2. Cut ends off squash and cut squash in half lengthwise.
  3. Using a teaspoon, scoop out seeds.
  4. Cut crosswise into ½ inch slices.
  5. In a large bowl toss squash well with the oil and salt making sure it is well coated.
  6. Place squash cut surfaces down on a cookie sheet.
  7. Keep oily bowl for tossing green onions.
  8. Bake checking to see if the bottoms are browned every 10-15 min. You may want to rearrange them if the edge pieces brown before the center ones. They should be browned on the bottom sides in 15-25 min.
  9. Meanwhile cut the green onions into 1 inch slices and toss them with what’s left of the oil in the large bowl.
  10. Once the squash slices are browned on the bottoms, flip them over with a spatula. Push them over in the pan to allow room for the green onions and add onions.
  11. Bake the onions for 15 minutes and remove. If squash are not browned on their bottom sides continue baking about 10 minutes more.
  12. In a small bowl, melt the margarine/butter in the microwave – it won’t take long so watch it.
  13. Mix in the maple syrup with the margarine.
  14. Toss vegetables gently with the margarine in a serving bowl.
