Quinoa Tabouli

Serves: 4-6 servings
Ingredients
  • 1 cup quinoa, rinsed well in a strainer
  • 1 ¾ cups water
  • 1 bunch parsley, finely chopped
  • 6 green onions chopped
  • 2 Roma tomatoes, chopped
  • ¼ cup fresh lemon juice (1 large or 2 small lemons)
  • ¼ cup canola or olive oil
  • ¼ cup rice vinegar
  • ½ tsp salt
  • freshly ground pepper to taste
Instructions
  1. Combine quinoa and water in a pan and bring to a boil.
  2. Turn down heat, cover and simmer about 15 minutes until fluffy and water is absorbed.
  3. Allow to cool.
  4. Meanwhile chop vegetables and stir lemon juice, oil, salt and pepper together for dressing.
  5. Combine quinoa with vegetables and toss to coat with dressing.
