Best Grilled Shrimp

Ingredients
  • 1 ½ pound extra large or jumbo shrimp
  • ½ cup extra virgin olive oil
  • 1 Tbsp grated ginger
  • 5 cloves garlic, minced
  • ¼ cup thinly sliced fresh basil
  • 2 stalks lemon grass
  • ½ tsp salt
  • freshly ground black pepper to taste
Instructions
  1. Remove yellow outer layers of lemon grass and discard leaving more tender green layers.
  2. Cut green layers into 2-inch lengths and crush lightly with the back of a knife.
  3. Mix oil, ginger, garlic, basil, lemon grass, salt and pepper in a microwave safe container.
  4. Microwave on high 30 seconds.
  5. Let mixture stand 10 minutes.
  6. Meanwhile, peel and devein shrimp.
  7. Mix shrimp with oil mixture in a large zip-lock bag and refrigerate for at least 30 min or longer.
  8. Heat grill on high.
  9. Skewer shrimp and grill on high cover down for about 6-10 minutes turning frequently until just done.
