Pork Chops with Red Wine Sauce

Serves: 4 servings
- 4 pork chops
- 3 Tbsp olive oil
- Salt
- Freshly ground black pepper
- 1 onion, cut in half and sliced
- ½ cup red wine
- 1 cup beef broth
- ½ tsp salt
- ½ tsp dried basil
- 1 Tbsp cornstarch
- 1 Tbsp water
- 2 Tbsp fresh parsley, chopped
- Heat a large skillet over medium high heat.
- Add oil and chops.
- Sprinkle chops with salt and pepper to taste.
- Brown chops on both sides and transfer to a plate.
- Add onions to pan and cook until just starting to brown.
- Add wine to pan and boil scraping up browned bits from pan.
- Reduce wine by one half.
- Add beef broth, ½ tsp salt and ½ tsp basil.
- Return chops to pan along with accumulated juices.
- Bring to a boil, reduce heat, cover and simmer for 1 hour.
- Remove chops to a platter.
- Turn up heat under sauce.
- Mix cornstarch with water in a small bowl.
- Stir cornstarch mixture into sauce and boil until thickened.
- Serve sauce over pork chops and sprinkle with parsley.
