Juice from 2 Halo, Mandarin, or Clementine oranges, strained to remove pulp
1Tbsp white wine vinegar
¼ cup canola oil
1 small clove garlic, minced
¼ tsp salt
Freshly ground black pepper to taste, divided
2 pears, such as Bartlett or Anjou
2 apples, such as Gala (pick ripe but firm pears and apples)
4 Halo, Mandarin, or Clementine oranges
1 stalk of celery
⅓ cup of chopped walnuts
¼ cup feta cheese (optional)
Instructions
Mix the strained orange juice, white wine vinegar, canola oil, minced garlic, salt and black pepper and set aside.
Slice pears and apples thinly. (I used an 8-segment apple corer/slicer, and then sliced each slice in half again.)
Peel oranges and separate segments.
Slice the celery on a bias very thinly.
Toast chopped walnuts for a couple minutes in a hot skillet.
To serve either toss everything together in a large bowl and serve family style or you can toss the fruit, celery and dressing together, dole out individual servings and artfully sprinkle with feta (if using) and walnuts.
Sprinkle with a little extra black pepper and serve.
