I was looking for a vegetable/starchy side for some Mediterranean inspired turkey burgers recently. I like bean-based sides because they’re higher in fiber and nutrients than rice, pasta or potatoes.
Cannellini Salad
The cannellini salad I came up with bears some resemblance to Carolina Caviar, a black-eyed pea, green olive and red onion salad but the flavors are decidedly Mediterranean. It was the perfect accompaniment to our Turkey Burgers Piccata! And it’s super easy to make!
Mediterranean Cannellini Salad

Ingredients
- One 14 oz can cannellini beans, rinsed and drained
- ½ lb mixed olives, chopped
- 3 Tbsp chopped roasted red peppers (substitute part of this with hot cherry peppers if you like a little heat)
- ⅓ cup finely chopped red onion
- Juice of half a lemon
- 1 Tbsp extra virgin olive oil
- 1 tsp honey
- 1 tsp fresh oregano, chopped fine
- 1 tsp fresh rosemary, chopped fine
Instructions
- Mix the herbs and oil in a microwaveable bowl and microwave on high 20 seconds.
- Add the honey and lemon juice and let the dressing sit for 10 minutes so the flavors can meld.
- Mix the beans, olives, red pepper and onion.
- Whisk dressing to mix and pour over vegetables.
- Toss to coat.
