This is my second nightshade free barbecue sauce recipe. My first nightshade free barbecue sauce was based on what’s kind of become the standard nightshade free tomato sauce substitute: beets, carrots, onion, and garlic. That sauce tastes amazingly like tomatoes and is very healthy. I’ve done a nightshade free marinara sauce with those ingredients, too. The only downside is it takes a bit of work, what with the peeling, chopping, cooking and processing.
Nightshade Free Barbecue Sauce Version 2 is quick, easy and so good!
This new nightshade free barbecue sauce is completely different. It’s based on blackberry and apricot preserves (substitute spreadable fruit for preserves if you’d like to avoid the high fructose corn syrup). This barbecue sauce is quite a bit simpler and I think I prefer it, too. It’s sweet, tangy, spicy and caramelizes beautifully on the grill or under the broiler. It’s every bit as good as any tomato-based barbecue sauce! I used it on some slow-cooked ribs recently and it was amazing! It’s great with pork or chicken (or any poultry). And I think would be good with meatballs or as a hamburger condiment, too.
If you have to eat nightshade free, or even if you don’t, give this a try next time you’re longing for some barbecue! You won’t be disappointed!
- ¼ cup finely chopped onion
- 1 clove garlic, minced
- 1 Tbsp cooking oil
- ¼ cup dry red wine
- ¼ cup apple cider vinegar
- 1 Tbsp balsamic vinegar
- 1 Tbsp molasses
- ¼ tsp allspice berries
- ½ tsp dry mustard
- a small pinch of ground cloves
- ⅛ tsp white pepper
- ⅛ tsp salt
- freshly ground black pepper to taste
- 1 bay leaf
- ¼ cup apricot preserves
- ¼ cup blackberry preserves
- Cook onion in oil in a small saucepan over medium heat until starting to brown.
- Add minced garlic and stir just until aroma comes, 30 seconds to a minute.
- Add wine and rest of ingredients and simmer 10 – 15 minutes until reduced and thickened.
- Brush it on whatever you're grilling toward the end of the cooking or brush on for a quick broil after slow cooking. I've even added some of this to stir fries with great results.
