Believe it or not – wasabi and Brussels sprouts are a match made in heaven! The bite of the wasabi really stands up to the assertive flavor of the Brussels sprouts. The wasabi is mellowed a bit by the broiling and the mayo makes for a nice creamy sauce. Add shallots and bacon and you’ve never had Brussels sprouts so good! Kudos go to my hubby for creating this recipe! I often tell him he can cook for me any time!
Wasabi Brussels Sprouts can be made with a pre-mixed wasabi mayonnaise or easily make your own.
We used wasabi mayonnaise from Trader Joe’s – a wonderful condiment by the way. If you can’t find it pre-made, you can make your own by combining 1 tsp wasabi paste with ¼ cup mayonnaise (light is fine).
These Wasabi Brussels Sprouts with Bacon can be made ahead and quickly broiled at dinner time.
This is a pretty quick recipe, mostly done on the stove. It will hold if need be after the Brussels sprouts are steamed. Just mix in the wasabi mayonnaise . When you’re ready to serve, just pop it under the broiler for about 3 minutes until the sauce starts to brown. Toss with the bacon and serve.
- 1 lb Brussels sprouts, ends trimmed, large sprouts cut in half lengthwise.
- 3 slices of bacon, chopped
- 1 shallot, sliced
- 1 Tbsp olive oil
- ¼ cup white wine
- ¼ cup water
- ¼ cup wasabi mayonnaise (to make your own, mix 1 tsp wasabi paste with ¼ cup mayonnaise – light will work fine)
- Cook bacon in a large skillet until crispy.
- Remove bacon to a bowl.
- Drain all but 1 Tbsp bacon fat from pan.
- Add 1 tbsp olive oil.
- Add Brussels sprouts, cut sides down, initially, and brown on medium high heat, 3-5 minutes.
- Add wine and deglaze pan by scraping up browned bits on bottom.
- Add water and shallots, cover, reduce to simmer and steam Brussels sprouts about 10 minutes until just tender.
- Mix in wasabi mayonnaise.
- The dish can hold now until you’re ready to serve.
- Preheat broiler to high with rack in middle of oven.
- Broil Brussels sprouts on high about 3 minutes until sauce starts to brown.
- Toss with reserved bacon and serve.
