Strawberry Vinaigrette

Yay! The strawberries are here! In my neck o’ the woods for the next month or so we’ll be able to get those delectable sweet juicy local strawberries. They’re not just for dessert! They’re great in salads and can be pureed up into a wonderful strawberry infused dressing.

This pretty, delicious strawberry vinaigrette is great on green salads as well as quinoa or rice salads. And it could be a great sandwich spread, too.

It’s very easy to make with few ingredients and you just puree it all up in your choice of appliance: blender, mini-blender, mini-chopper. A few minutes and you’ve got a creamy strawberry vinaigrette that really celebrates the season!

Recipe type: Dressing
Ingredients
  • 1 ¼ cups strawberries, green tops removed
  • ½ cup canola oil
  • ½ cup white wine vinegar
  • ½ tsp salt
  • freshly ground pepper to taste
  • 1 Tbsp honey
Instructions
  1. Combine all ingredients in a blender/ mini-blender/ mini chopper and puree until smooth.
