I’ve been making versions of this recipe for years. It’s a great simple, don’t feel like a lot of fuss dinner. The pork chops simmer in the red wine sauce for a fairly long time, an hour, but the preparation time is short. And it’s just a hearty, comforting dish. I recommend serving the pork chops with rice or noodles to sop up the wonderful sauce.
The pork chops develop a fond (browned bits) as they’re browned that adds great depth to the sauce. Plenty of pork flavor is imparted to the sauce as well during the long simmer. That little bit of wine gives great character. And the onions make it taste like a rich onion soup. Thickening with cornstarch keeps it gluten free and gives the sauce a nice shimmer.

- 4 pork chops
- 3 Tbsp olive oil
- Salt
- Freshly ground black pepper
- 1 onion, cut in half and sliced
- ½ cup red wine
- 1 cup beef broth
- ½ tsp salt
- ½ tsp dried basil
- 1 Tbsp cornstarch
- 1 Tbsp water
- 2 Tbsp fresh parsley, chopped
- Heat a large skillet over medium high heat.
- Add oil and chops.
- Sprinkle chops with salt and pepper to taste.
- Brown chops on both sides and transfer to a plate.
- Add onions to pan and cook until just starting to brown.
- Add wine to pan and boil scraping up browned bits from pan.
- Reduce wine by one half.
- Add beef broth, ½ tsp salt and ½ tsp basil.
- Return chops to pan along with accumulated juices.
- Bring to a boil, reduce heat, cover and simmer for 1 hour.
- Remove chops to a platter.
- Turn up heat under sauce.
- Mix cornstarch with water in a small bowl.
- Stir cornstarch mixture into sauce and boil until thickened.
- Serve sauce over pork chops and sprinkle with parsley.
