Philly Cheese Steaks on Portobello Mushroom “Buns”
My hubby, who's from Philadelphia, invented the ultimate low-carb sandwich: the Philly Cheese Steak on Portobello Mushroom “Buns”. It is so easy to make – great for the lazy days of summer. You won’t believe how rich, juicy and yummy it is! If you love portobello mushrooms, you will love this sandwich! You just scoop out the gills from the mushroom caps, and broil them a few minutes. Saute up some onions and peppers. Saute some chopped deli roast beef with a little soy sauce, sherry and tomato paste. Top the mushroom/bun tops with slices of provolone cheese, and put them under the broiler … [Continue Reading...]

Leftover Lamb Tacos
Day two and our final installment in Savory Nature’s post Easter series – “What do you do with leftover roast lamb?” These Lambacos (as he calls them) are a creation of my husband, Greg, and, WOW, the flavors! They’re kind of Greek meets Tex-Mex meets U.S. and it’s a harmonious good time! Greek spices give…
Leftover Lamb Curry
A great roast makes a wonderful holiday meal, but there’s often more roast than meal. With Easter just passed, I’m guessing there’s a lot of leftover roast lamb out there looking for a creative repurposing. Hubby and I were pondering this exact predicament last night when he said, “How about a curry?” This was an…
Grilled Chicken, Pineapple and Peppers with Cashew Sauce
Quick, easy, colorful, healthy, bursting with flavor, and easy clean-up – does this sound like your perfect meal!? As the weather gets warmer, there’s no better way to enhance flavor and minimize clean-up than grilling. That open flame imparts a wonderful smoky, sweet caramelization to meat, vegetables and fruits alike. Chicken thighs, pineapple, peppers and…
Napa Cabbage and Kale Slaw
Slaws make such great sides… or toppings… or fillings. The crisp vegetables and sweet/tart dressing are so refreshing, especially as the weather gets warmer and yes, folks we’re getting there! This Napa Cabbage and Kale Slaw has Asian flair and would go great with any sort of Asian inspired grilled meat, for instance Teriyaki chicken…
Sweet and Sour Chicken – Soy Free Nightshade Free
Sweet and sour tastes are so complementary, and the combination is used in many cuisines. Sweet and sour chicken is a dish that is hugely popular at American Chinese restaurants. It’s thought to originate with Cantonese Chinese cooking, but it’s been Americanized with the addition of things like ketchup. We also tend to compose a…
New England Clam Chowder – Dairy Free, Gluten Free
Having grown up in New England, I love all things clam – fried clams, clam rolls, clam chowder – as long as it’s the creamy New England variety, not that thin tomato-brothy Manhattan stuff! Sorry, New Yorkers, but yes, I’m a New England clam chowder bigot. New England Clam Chowder was just a memory. Being…
Chicken Stew with Butternut Squash, Pearl Onions and Kale
Stews are such perfect cold weather meals! There’s something about the combination of meat and earthy vegetables in a hot savory broth that just chases the chill away. This stew is no exception, but it’s a little brighter both in flavor and color than your average stew, thanks to some tangy vinegar and pretty butternut…
Thai Shrimp Noodle Butternut Squash Soup
Long name – simple soup! And it is as beautiful and delectable as it is simple! Butternut squash gives the broth that gorgeous color and gentle sweetness, while fish sauce and fresh ginger delicately fill in the background. The flavors may be subtle, but don’t expect subdued comments when you serve this. Here’s what I…
Creamy Carrot Cauliflower Spinach Soup
What a tasty way to eat your veggies! If you love creamy soups like I do, you’ll love this creamy carrot cauliflower spinach soup. It’s full-flavored thanks to some Indian spices and all those veggies! I often have a hard time finding the words to describe the flavors of vegetables. Sweet, earthy, and nutty come…
Is Non-Celiac Gluten Sensitivity Misnamed?
Most of the time I post recipes, but occasionally I will post about food sensitivity or nutrition related topics. I came across an interesting article about non-celiac gluten sensitivity in Scientific American recently and want to pass it on. Great magazine by the way for anyone interested in the advances of science – very balanced,…
